Vindaloo

Ingredients:

1 Mishra’s Curry Cube

300g diced meat or mix veg

1 onion, finely chopped

2 ripe tomatoes, finely chopped

2 tbsp garlic and ginger, minced

1 tbsp sugar

2 tbsp white vinegar

1 tbsp chilli powder

1 cup of water

3 tbsp oil

 

Step one

Heat the oil over a low to medium heat, then shallow fry the onion, garlic and ginger for 5 mins or until the onion has softened and is golden.

Step two

Add the Curry Cube, tomatoes, vinegar, sugar and chilli powder and cook for 1 minute. Add the meat/veg and mix thoroughly. Allow to cook for 5 mins, stirring frequently.

Step three

Stir in the water over a high heat and bring to a boil, then reduce to a simmer and cook until the sauce has thickened. Serve hot, with rice and/or Indian breads.
